Who we are

The SUSTAINABLE GASTRONOMY certification was created through collaboration between AZTI and the Basque Know How Foundation, with the aim of recognising and showcasing establishments that make sustainability a core part of gastronomy.

Origins

At the “Sustainability and Gastronomy” conference held in Bilbao in June 2018, it became clear that sustainability was already part of the sector’s future — and its present.

On the one hand, customers were showing growing interest in gastronomic proposals that take into account place, society and people.

On the other hand, many establishments had already incorporated these values into the way they work.

In response to this reality, and with the aim of highlighting the sector’s commitment, the Basque Know How Foundation and AZTI joined forces to create a certification that would recognise establishments integrating the principles of sustainable development into their day-to-day operations.

AZTI is a scientific and technological centre specialising in the marine and food sectors. Its mission is to promote a healthier, more sustainable and more inclusive society by developing innovative technologies based on scientific excellence.
Basque Know How Foundation is a non-profit foundation whose mission is to promote concepts and working models based on creativity, gender equality and the principles of sustainable development, while also supporting projects that generate a positive impact on society.
